Happy pastrami sandwich day! A staple in delis all over the world, it’s easy to see why this humble smoked meat is so popular. So for today’s sandwich, you’ll need:
- 2 tbsp butter
- 1 onion
- Salt and pepper
- ¾ cup beer
- 4 big slices pastrami
- Whole grain mustard
- Smoked mozzarella cheese
- A few gherkins
- Bread of your choice
Melt the butter in a frying pan, and add the onions. Cook until soft, then add the beer.
Stir occasionally until the onions are tender and the liquid is slightly syrupy. Remove the onions, and set aside. In the same pan, add the pastrami, and lightly crisp the meat until warmed through.
Quickly toast the inside of your bread, until slightly crispy.
Brush the outside of the bread with butter and assemble your sandwich. I covered the bread with the mustard, then the onions and sliced gherkins, followed by the pastrami. I finished it off with the smoked mozzarella.
Cook the sandwich on the grid (or in a skillet), pressing the whole thing down occasionally with a spatula. It’ll be ready once the cheese start oozing out of the sides, about four minutes per side.
And there you go! Easy, and ridiculously tasty. Obviously you can add whatever you fancy in the sandwich – maybe try it with some horseradish and rocket. In the end, a sandwich can be whatever you want it to be. Bon appetit!
